My Perfect Crêpes Recipe



MY PERFECT CRÉPES RECIPE

Breakfast is where I excel in cooking, and crêpes is by far my favourite breakfast recipe. After diligently perfecting my ingredients and method, I want to share this delicious recipe with you too. In order for them to turn out perfect, please take care to follow all instructions. This recipe makes 8 or so crêpes. Happy cooking!

Ingredients:

Dry
1 cup all purpose flour
1 tablespoon cinnamon
pinch of salt

Wet
2 eggs (room temperature if possible)
1/2 cup milk
1/2 water
2 tablespoons melted butter


Mix all dry ingredients in a small bowl. If you want to make chocolate flavoured crêpes, you could add in a teaspoon of hot chocolate mix to the dry ingredients as well (very yummy).

Pour the milk and water in a medium, microwave safe bowl. Heat mixture for about a minute, until warm. Then, transfer warm milk and water mixture into a large mixing bowl. Next, melt butter in a small, microwave safe bowl for about 30 seconds. While stirring, combine melted butter into the mixing bowl with the milk and water. Lastly, crack in two eggs and mix until all wet ingredients are blended.

(This heating method is crucial to keeping the mixture properly blended. If not, the butter will harden when it hits the cold milk, and you'll be working backwards!)

Grab your hand mixer and spoon the dry ingredients into the wet ingredients as you mix on high. This is the most time consuming, and takes me about 10-15 minutes to get a beautiful smooth batter. If you choose to mix by hand, make sure to use a sifter.

Once the batter is smooth, heat up a large non-stick frying pan on medium/high (7-8/10). I use a few drops of cooking oil in the center between crêpes. Grab a large spoonful of the batter and pour it into a large C shape. Quickly tilt the pan to fill in the C's empty side, and smooth any extra batter onto the edges with a flipper or spatula. This technique takes practice, and is key to making your crêpes as thin as possible. Cook about 1-2 minutes on each side.

To reduce oil, layer crêpes stack between pieces of paper towel while cooking. Once you're done cooking, fill your crêpes full of fresh fruit, drizzle with honey, and do a thorough sprinkling of icing sugar! Please leave a comment if you tried this recipe, I would love to hear how it turned out.
